GIULIANO FERLA’S MELANZANE ALLA PARMIGIANA

“Don’t be shy with the basil”

Giuliano Ferla’s recommendation for this recipe is to make it your own - you could even throw in some lasagne sheets. To make it super Sicilian, add slices of boiled egg.

Flavours to look for are: all your flavours! A bit of bitterness, some sweetness, the fat of the mozzarella, the sweetness of the basil.

Serve with a radicchio salad and drink it with wine or Fernet Branca (a great Amaro for settling the tummy).
