LYN’S (PRETTY PHLY FOR A WHITE GUY) PHO

When coming up with a name for his recipe, Lyn started with “Pretty phly for a white guy”, but is also considering “Pretty pho pho a Sailor(boi)...”

Lyn’s recipe is a luscious pho soup - warm, spicy and meaty (but only if you like!). It’s great after a cold day in the studio and is easy to make.

Tips:

• keep the beef really pink inside because the broth will cook it, don’t be scared of the pink meat!

• Lyn loves the thai basil - you only need a little bit of it and it goes a long way

• Kylie Minogue is a crucial addition to his kitchen soundtrack, so be sure to honour Lyn and Queen Kylie herself when you try this recipe at home

ingredients

1 beef steak (whatever cut you like) or sub in chicken or veg

500ml beef stock

1 cut OXO beef stock

1/2 of one of those cute flavour booster packs (I use the garlic and chilli)

1 bok choy

1 bundle noodles (I use rice noodles but use your fave)

Big handful of bean sprouts

Thai basil

Lemon juice

Sriracha

method

1. Cook the meat how you like, I tend to cook it 2-3 minutes on each side so that it is nice and pink and juicy on the inside, and set it aside.

2. Get the soup going in a pot, both stocks and booster pack.

3. In another pot get your noods going, this might be different depending on what type you use, so follow the instructions on the pack.

4> Roughly cut the bok choy and whack that in the stock pot, followed by the cooked noods, give it a bit of time to heat up and serve it into two bowls (or one big bowl if you are a greedy little gremlin like me).

5. Thinly slice the beef and introduce it to its new soup friend.

6. Bring the bean sprouts to the party and add the thai basil, lemon juice and sriracha to taste
